Cut the sweet potatoes into 1/2 inch chunks or 1/8 inch slices, whichever you prefer.
Warm the oil in a skillet over medium heat.
Once the oil is hot, add the sweet potatoes, chopped bell pepper, and chopped onion to the skillet. Add salt and ground black pepper to taste. Mix the contents of the skillet so the oil coats everything. Stir frequently.
Cook until the potatoes are cooked through. Serve hot and enjoy!
