Ingredients
  • 4 Medium Sweet Potatoes
  • 1/2 small sweet onion Chopped
  • 1 medium Bell Pepper Chopped. You can use any color you like or mix it up.
  • 2 tbsp Extra Virgin Olive Oil
  • To Taste himalayan salt
  • To Taste ground black pepper

Instructions
  1. Clean and peal the sweet potatoes.
  2. Cut the sweet potatoes into 1/2 inch chunks or 1/8 inch slices, whichever you prefer.
  3. Warm the oil in a skillet over medium heat.
  4. Once the oil is hot, add the sweet potatoes, chopped bell pepper, and chopped onion to the skillet. Add salt and ground black pepper to taste. Mix the contents of the skillet so the oil coats everything. Stir frequently.
  5. Cook until the potatoes are cooked through. Serve hot and enjoy!
