Ingredients

  • 3lbs


    organic ground turkey

  • 1cup


    fresh organic sweet onionchopped fine

  • 1medium


    fresh organic tomatochopped fine

  • 4cloves


    fresh organic garlicchopped fine

  • 1/4cup


    fresh organic fennelchopped

  • 1/4cup


    fresh organic spinachchopped

  • 1tsp


    fresh organic oreganochopped

  • 1/2tsp


    organic thymechopped

  • 1 – 2tsp


    organic ground pepperto taste

  • 1 – 2tsp


    organic saltto taste

  • 1 – 2tsp


    organic crushed red pepper*optional

  • 6oz


    organic cheese* cheese is optional; we like cheddar or mozzarella

Instructions
  1. Preheat broiler to high.

  2. Remove zucchini pulp, leaving a 1/4-inch-thick shell. Chop pulp and place aside. Place zucchini halves on a parchment paper lined baking sheet. Place in oven for approximately 10 minutes or until zucchini is cooked through. Remove from oven and set aside.

  3. Heat a large skillet over medium-high heat. Add remaining ingredients except zucchini pulp and cook until turkey meat is cook through. Add zucchini pulp to mixture and cook for 2 minutes. Remove from heat.

  4. Sprinkle zucchini halves with salt then fill evenly with turkey mixture. Top with cheese and place in oven. Cook until cheese is melted and just starts to brown.

  5. Remove from oven and serve hot. Enjoy!
