Ingredients
  • 3 lbs organic ground turkey
  • 1 cup fresh organic sweet onion chopped fine
  • 1 medium fresh organic tomato chopped fine
  • 4 cloves fresh organic garlic chopped fine
  • 1/4 cup fresh organic fennel chopped
  • 1/4 cup fresh organic spinach chopped
  • 1 tsp fresh organic oregano chopped
  • 1/2 tsp organic thyme chopped
  • 1 - 2 tsp organic ground pepper to taste
  • 1 - 2 tsp organic salt to taste
  • 1 - 2 tsp organic crushed red pepper *optional
  • 6 oz organic cheese * cheese is optional; we like cheddar or mozzarella

Instructions
  1. Preheat broiler to high.
  2. Remove zucchini pulp, leaving a 1/4-inch-thick shell. Chop pulp and place aside. Place zucchini halves on a parchment paper lined baking sheet. Place in oven for approximately 10 minutes or until zucchini is cooked through. Remove from oven and set aside.
  3. Heat a large skillet over medium-high heat. Add remaining ingredients except zucchini pulp and cook until turkey meat is cook through. Add zucchini pulp to mixture and cook for 2 minutes. Remove from heat.
  4. Sprinkle zucchini halves with salt then fill evenly with turkey mixture. Top with cheese and place in oven. Cook until cheese is melted and just starts to brown.
  5. Remove from oven and serve hot. Enjoy!
