Homemade Tomato Basil Sauce that is nothing less then delicious!

Ingredients
  • 5 pounds of fresh organic tomatoes peeled (optional), seeded and diced. (to peel, cut a small "x" on the top and drop in to boiling water for 10 seconds and drop in to an ice bath. Skin will easily peel off) My favorite tomatoes for sauces are Roma and San Marzano. Big and Tangerine Mama tomatoes also have great flavors for sauces.
  • 1/3 cup organic olive oil or tallow
  • 3 medium organic onions diced
  • 8 cloves fresh organic garlic finely minced, or more to taste
  • 1/2 cup fresh organic basil leaves finely chopped
  • 1 tsp sprig of fresh organic thyme leaves or ½ tsp dried
  • 1 teaspoon sprig of fresh organic oregano or 1 tsp dried oregano
  • 2 leaves organic bay leaves remove when done
  • 2 tsp sprigs of organic parsley or 1 tsp dried
  • 1 teaspoon organic ground pepper more or less to taste
  • 1 teaspoon organic sea salt more or less to taste
  • 2 organic carrots 1/2 should be grated and the other half should be large chuncks added at and then removed
  • 1 tablespoon organic honey optional (only use if your are not following #paleo)

Instructions
  1. Pour olive oil into a large stockpot over medium heat.
  2. Add diced onions, garlic and grated carrots. Saute for 6-8 minutes or until onions are translucent and tender.
  3. Add tomatoes, chopped basil leaves, oregano, thyme, bay leaves, parsley, sea salt and ground black pepper.
  4. Simmer on low heat for 1 1/2- 2 hours or until cooked down and starting to darken. (Cook time may be longer depending on the size of the pot and temperature)
  5. Add carrot piece for 30 minutes to absorb acidity.
  6. Remove sprigs of herbs and pieces of carrot.
  7. Optional: Use a blender to puree sauce until smooth (For a thicker sauce, skip this step.)
  8. Use fresh or store in the fridge up to 1 week or freeze for later use.

Recipe Notes

My favorite tomatoes for sauces are Roma and San Marzano. Big and Tangerine Mama tomatoes also have great flavors for sauces.
