Organic Avocado Cauliflower Rice

Ingredients

  • 1large


    organic head of cauliflower, florets removedSubstitute: 6 cups riced cauliflower

  • 3/4tablespoon


    organic avocado oil

  • 1cup


    organic yellow oniondiced

  • 2cloves


    organic garlicminced

  • 1 1/2small-medium


    organic avocados

  • 1medium


    organic jalapeñominced

  • 1/2cup


    organic cilantrofinely chopped

  • 1 1/2tablespoons


    organic lime juice

  • 1/4teaspoon


    organic salt and peppermore or less to taste

Instructions
  1. Put the cauliflower florets in a blender or food processor until it is in the form of rice pellets. If you bought cauliflower rice, skip to step 2.

  2. Heat a large sauté pan over medium heat and add the avocado oil. Once the avocado oil is hot, sauté the diced onions until translucent, approximately 5 minutes. Add the minced garlic and cook for 1-2 minutes.

  3. Add the cauliflower rice to the sauté pan mixture. Cover and cook for 8-10 minutes or until the cauliflower rice is soft, stirring occasionally.

  4. While the rice is cooking add avocados to a large mixing bowl and mash with a fork or potato masher to the texture of your choice. Once mashed stir in the minced jalapeño, lime juice, and salt and pepper.

  5. Mix the avocado mash to cauliflower rice and mix well. Mix in the cilantro. Serve hot and Enjoy!
