Ingredients
  • 1 large organic head of cauliflower, florets removed Substitute: 6 cups riced cauliflower
  • 3/4 tablespoon organic avocado oil
  • 1 cup organic yellow onion diced
  • 2 cloves organic garlic minced
  • 1 1/2 small-medium organic avocados
  • 1 medium organic jalapeño minced
  • 1/2 cup organic cilantro finely chopped
  • 1 1/2 tablespoons organic lime juice
  • 1/4 teaspoon organic salt and pepper more or less to taste

  • 1 medium organic jalapeño minced
  • 1/2 cup organic cilantro finely chopped

Instructions
  1. Put the cauliflower florets in a blender or food processor until it is in the form of rice pellets. If you bought cauliflower rice, skip to step 2.
  2. Heat a large sauté pan over medium heat and add the avocado oil. Once the avocado oil is hot, sauté the diced onions until translucent, approximately 5 minutes. Add the minced garlic and cook for 1-2 minutes.
  3. Add the cauliflower rice to the sauté pan mixture. Cover and cook for 8-10 minutes or until the cauliflower rice is soft, stirring occasionally.
  4. While the rice is cooking add avocados to a large mixing bowl and mash with a fork or potato masher to the texture of your choice. Once mashed stir in the minced jalapeño, lime juice, and salt and pepper.
  5. Mix the avocado mash to cauliflower rice and mix well. Mix in the cilantro. Serve hot and Enjoy!
