Ingredients

  • 1/4cup


    Organic Almond Flour

  • 1/2cup


    Shredded coconut

  • 1tablespoon


    Stevia for Baking*or more to taste

  • 1tablespoon


    vanilla extract

  • 1tablespoon


    coconut oil

  • 3


    egg whites

Instructions
  1. Chill a medium bowl in the freezer for mounting the egg whites.

  2. In a bowl mix almond flour, coconut and stevia until well blended.

  3. In a small saucepan melt the coconut oil. Add the vanilla extract and mix.

  4. Add the melted coconut oil to the flour mix and blend really well.

  5. Remove the chilled bowl from the freezer. Put the egg whites in the chilled bowl and whisk until stiff. The egg whites should be very foamy and holding stiff peaks.

  6. Very gently mix the egg whites into the flour mix. Do not overmix as you want to preserve the volume from the eggs whites.

  7. Spoon the mixture onto a cookie sheet. You can also use mini muffin tins if you prefer. Makes 10 portions!

  8. Bake at 400 for 8 minutes or until macaroons start to brown on top.

  9. Remove from oven. Let cool before removing from the cookie sheet or muffin tins.

  10. Serve and Enjoy!
